Sick Baby Pumpkin Pie



We had dinner guests coming over the weekend, and I didn't want to go back out to the grocery store. So I rummaged around the house for ingredients and found a container of pumpkin puree nestled in the back of the freezer. The puree dates back to when I roasted and pureed the Halloween pumpkins we bought, but it looked to be in fine condition for pie use. I churned out this beautiful Pumpkin Pie, but alas our dinner guests never arrived (a sick baby kept them home).

Mixed Berry Dinner Party Pie



We got invited to another work colleague dinner, hence another Mixed Berry Pie. This one had strawberries, blackberries, and red raspberries because they were half-price at the grocery store. So I bought twice as many and made pie with them!

Baby Shower Chocolate Pudding Pie



I also made a Chocolate Pudding Pie for the baby shower, using my same substitutions of arrowroot starch instead of cornstarch and plain honey graham crackers instead of chocolate. I also omitted all of the coffee shenanigans.

An Empanada Interlude



Look at these beauties! I made beef empanadas, which are technically savory hand pies, for my sister-in-law's baby shower. It was my first time making empanadas and they turned out great. They're not true pie, mind you, so I won't count them toward the pie tally, but thought they were exciting to share.

Hazy Shade of Recollection New Year's Berry Pie



It looks like this is a Blueberry-Blackberry Pie. I think I either made it for New Year's Day dinner at my brother's house or for some work colleague dinner guests of my husband. Either way, I'm sure it was delicious - look at that radiant pie goo! Recipe is similar to this one, except I used blueberries instead of strawberries.

Crowd-Pleaser Apple Pie



I had a few dregs of Karo syrup that needed to be used up, so I threw together this Apple Pie for Christmas dinner. I substituted Karo syrup for the molasses in this one. Since I had quite a crowd over (11 people), I find it hard to believe that I only made one pie, but I lack photographic evidence to back up the theory of my having made an additional pie. I'm guessing there was also a Banana Cream Pie in the refrigerator. Oh well.

Back-of-the-Syrup-Bottle Pecan Pie



We went to my mother's for Thanksgiving dinner and she gave me strict instructions to follow the Pecan Pie recipe on the back of the Karo syrup bottle. So, that's what I did. It was good, but I like my version better. Mom, however, is not a fan of my high-falutin' syrup substitutions.

Landlord-Commissioned Chocolate Pecan Pie



I made this one by request for my landlords for Thanksgiving. I didn't have any of my weird sorghum and brown rice syrup on hand, so I just used Karo syrup this time (though slightly less). I think it probably made the pie too sweet, but the landlords said they still enjoyed it! Recipe is here.

Sweet November Crapple Pie



Once cranberries started showing up in the grocery store, I had a craving for my Cranberry Apple Pie, also known fondly as Crapple Pie. I made this one fancy by topping with some cinnamon sugar, because we shared it with the landlords. It was a hit!

Halloween Pumpkin Pie



This is from Fall 2018 - I am playing catch-up as usual. The kids had a fall festival at their school, so we got a couple pumpkins. After they served their duty as front stoop decor/centerpieces, I roasted them and made pie with them. Recipe can be found here.
