Lunch


Homemade egg salad on sauerkraut rye.

Egg Salad:
12 hard-boiled eggs, shelled and chopped
1/4 - 1/3 c. mayonnaise
1 T. Dijon mustard
handful of chopped fresh dill
handful of chopped fresh chives
salt and pepper to taste

Combine all ingredients and enjoy.

You might also enjoy a curried egg salad recipe I've been using for the past five years.

4 hard boiled eggs
1/4 cup diced red pepper
chopped onions (add what you like - I chop up a single green onion)
1 and 1/2 tsp curry (I like spicy madras curry)
1/3 cup mayo
salt and pepper to taste

It's my favorite!
